Crispy Broccoli and the Suitcase Entrepreneur
Hi y’all – it’s another healthy veggie recipe.
I’m loving vegetables lately, and finding new, exciting ways to eat them!
This week, I’m buying a bunch of broccoli. And, my inspiration here is totally awesome, so I have to tell you about this first.
I’ve been inspired by Natalie Sisson’s interview on Radio Enso. Natalie is the Suitcase Entrepreneur - a digital nomad doing social media coaching while traveling the world. One of her passions is athletics – in fact, she’s about to bike half of Africa, from Nairobi to Cape Town, raising money to empower girls through sports. Wow!
This is such a small thing to have taken away from Natalie’s amazing talk – which was incredibly inspiring in so many BIG ways – but nevertheless, the truth is that her interview inspired me to eat more broccoli. I’ve been on a mission to build muscle lately, getting into weight lifting (dude, it’s fun!) – and Natalie mentioned she got her bodybuilding body by eating chicken and broccoli. Yep, that’s right, Natalie’s been a bodybuilding champion, as well! So, I decided I wanted to discover more ways to enjoy this superfood.
Okay, the long-awaited “recipe”. I made these just like kale chips. Toss fresh broccoli in a bit of olive oil, and season to taste – I use garlic salt. Bake at 375 degrees until broccoli is crispy.
The taste is reminiscent of kale chips. I ate it just like chips. There’s even a little easier to make, since broccoli is easier to wash and dry, and you can be a little rougher with the broccoli as you toss in olive oil. You could probably use a dip with these if you wanted, too. I call this a win!
