Guacamole Salad – a quick, super healthy delicious dinner idea :)
Raise your hand if you don’t like guacamole.

This is a favorite I discovered during our summer/fall adventure in California. I was preparing a dinner at the Hacker Dojo – a ridiculously awesome co-working space for techies – and limited in cooking utensils and appliances. Once again, scarcity breeds creativity.
I’d just returned from an SF market with a load of delicious fruits and veggies on the cheap. I chopped up tomatoes, red onion, avocado, added a little garlic salt, and ate it outside on the picnic table in the sunshine with half of a papaya. Pure bliss.
I’ve made this several times since then, it’s one of my favorite dinners. It’s raw, easy to prepare, and freaking amazing – guacamole in salad form! I’ll often add cilantro, or fresh garlic if I have it. Yum!
I swear this blog isn’t about guacamole, but it’s just too delicious not to write about. YUM!
