Pastaless pasta – delicious winners!
As you know, I’ve been on a quest to discover the perfect vegetable spaghetti alternative. I’ve tried spinach, carrots, zucchini and squash. We finally have a winner – spiralized vegetable noodles!
The Prepared Winner
First of all, for prepared foods – the winner is Pad Thai, from the Triangle Raw Foodists!
In this dish, they combine zucchini and squash to make satisfying noodles, with a delicious peanut sauce. Outstanding!
The DIY Winner
I recently got a spiralizer (thanks, Mom & Dad!), and it’s been love at first site. On the left, a picture of spiralized cucumbers and zucchini (with Ragu!), on the right; spiralized apples with cinnamon, butter, and a little cayenne. Delicious! The spiralizer is surprisingly easy to use, relatively easy to clean. 

Will it do as a pasta substitute?
First of all, I’m convinced, from personal experience, that processed carbs are actually addictive. If you’re in the midst of a pasta/bread addiction, this probably won’t satisfy your craving. The good news – again from personal experience – is that if I just stop eating this stuff for about a week, I stop craving it.
That said – if you’re craving the taste and texture of noodles, this is an excellent, healthy alternative! Though the noodles don’t absorb the sauce in the same way, they will carry sauce – and also have a flavor all their own. You can enjoy a lot of it – a whole huge plate of zucchini pasta – and feel full, and so much lighter than after eating a huge plate of regular spaghetti. Pretty cool! These are great with butter and garlic as well. My next mission will be replicating mac & cheese – stay tuned.
So the most important question of the day – what can I spiralize next?
