Raw Recipe: Guac Stuffed Roma Tomatoes

…but here’s a guacamole recipe. I do love my guacamole.

Guac-Stuffed Roma Tomatoes

Guacamole: Mash avocados together with cilantro, garlic, salt, and red onion to taste. I used 2 avocados for this picture – I was really hungry and ate the extra guac with a fork. Who needs chips? :)

Stuffed tomatoes: Slice a teeny sliver off the bottom of each roma tomato, so that the tomatoes will sit nicely on your plate. Slice a bigger slice off the opposite end. Scoop out the seeds and pulp to make a bowl. Fill and put the hat back on for looks. Enjoy! :)
